My Eats on Friday

Hello! Hello!

Bittersweet day. I was sad leaving work today. I have thoroughly had over 7 wonderful years at a great job with special people. I had a fantastic start to my nutrition career and have gained tremendous experiences to last a lifetime. However, I am excited beyond measure to start my new endeavor with school food service and becoming a spokesperson for child nutrition. My co-workers and friend gave me a beautiful hand made quilt with sweet and caring messages for the next adventure in my life.

Here are my eats for the day:

Breakfast was one of my favorites. 1 whole omega 3 egg, 2 egg whites scrambled. Topped with diced avocado and salsa. I also had half a cup of blueberries. No bootcamp for me. I didn’t get in from my midnight movie until 2:30am, so no way I was gonna get up at before 5.

Since Friday was my last day at work we decided to go out for a late lunch and celebrate. We had planned to go to Thai Cottage to eat but apparently they close for people who want to eat a late lunch. Bummer. Oh well, we went next door to BJ’s Brewery and had a an exceptional lunch. We shared avocado egg rolls for appetizer. I had a mini meatballs and a mozzarella/tomato salad.

Since lunch was super late Todd and I were not too hungry come dinner time. And since the kids were at the farm with Nannie and Poppy, we were on our own and out of sorts.  Todd and I spent the rest of the night with a marathon with the last few episodes of Downton Abbey.  Our planned grilled pork chops were put on hold. I ended up basically having ice cream for dinner.Todd and I shared what was left in the container, so I had about 3/4th cup serving.

This picture makes me laugh! After I took it I noticed my Women’s Heath mag in the background. Ha!

Today’s Eats

Howdy Friends!!

Today has been a wonderful day. It was my off day since I will be working this Saturday. 🙂 AND  I woke up late. 🙂 AND I got to do a tae-bo class at the Y that never get to do because I am usually at work. 🙂 AND I had an impromptu lunch with Todd, Brent and Addi. Our friends Josh, Jackson, Scotlyn and Andrew joined us. 🙂 AND my friends at work gave me a cake and good wishes for my new job. 🙂 AND I am going to a midnight showing of Magic Mike tonight with some girl friends! 🙂 🙂 Man, life is good! The only sad part is Brent and Addison leave for the farm in Mineola, Texas tomorrow. They will be gone a week. 😦 I always miss them tons and tons but I know they always have a great time with Nannie and Poppy and the rest of the family there.

Here are my eats for the day…

Breakfast was supper yummy. Lots of nutrient dense foods. I had 2 kashi blueberry waffles topped with a tablespoon of chunky peanut butter. 6 oz of very vanilla yogurt with blueberries. I made myself a cup of island coconut coffee. Triple yum breakfast. Even my plate looks happy!

We ate lunch at Jimmy Johns. Addison’s favorite. And yes, they’re so fast you’ll  freak. I ate a sandwich called the Beach Club Unwich. It was made with a lettuce wrap instead of the french bread. I split reduced fat potato chips with Todd.

I made it over to work in the afternoon to have cake with my co-workers and friends. They gave me a beautiful Italian Cream cake! Here is my cake and the slice I ate. The cake was very good. I enjoyed every bite.

Dinner tonight was on track with the recipe coming from “The New Abs Diet” book.  I made Chicken a la King Kong.  No mess ups this time making the recipe. The kids really liked it. My plate was the chicken over whole wheat spaghetti noodles and a mixed green salad.

Surprise for Dad and Wednesday Eats

Does anyone know about the movie “Searchers” from 1956 with John Wayne? Well, this is my dad’s favorite movie. Me and my sisters heard him talking about it all the time growing up. I have seen it a couple of times and it is a great movie.  My sister, Tiffany, found out it was playing at our local cinema!! Dad’s birthday is in July so she wanted to surprise him and got tickets for all of us. The original fam…mom, dad, Kim, Tif and me, + Kim’s boyfriend Josh got to go.  Our other dude’s couldn’t make it.  He thought we were just going to dinner (I love surprises). Dad was totally surprised, we didn’t tell him until we were eating dinner. This is when Tif told him.

It was a great time.  He had the sweetest and excited look on his face. Here is a pic of me and dad…

We had a great time. We all really enjoyed the movie and being together. I could hear dad whispering different facts and tidbits about the movie. We all agreed there should me a remake. Maybe Viggo Mortensen or Liam Neeson as John Wayne??? Mom said Tom Selleck, HA! She has always loved him… Hehehe.

Here are my eats for the day.

Breakfast was a pb and j shake after my bootcamp class at 5am.  It has banana, peanut butter, berries and yogurt. Quite filling. Todd also made me an iced chai tea latte. BTW, I love the Bears!!! Can you tell?!

AM snack was small but tasty. 1 ounce of almonds and 1 ounce of craisins.

Lunch was deli roast beef on a whole wheat hot dog bun. I added veggies from the salad bar at work and picked up pineapples to add to my cherries.

Dinner was not our planned – Chile con Turkey. I actually forgot about the surprise plans with Dad, which is good actually  so I didn’t ruin the surprise. 🙂 We went to Chuy’s. I skipped the chips. I had a Corona Light, salad with a veggie enchilada and a small scoop of guacamole. Look at all that food!! Not too calorie dense.

TIP: Skipping the chips and margarita really help keep the calories down.
