Week in Dinners 8/11-8/17

Sorry about skipping the dinners post from last week.  We had something to do every day after work. From getting nails done, play date at Chick-Fil-A, summer tumbling, bridal dress appointment, an Alice in Wonderland play featuring Addi the green mushroom, and date night with the kids on Friday.


We even went to Schlitterbahn Galveston yesterday. We packed a picnic lunch and rode all the rides. The kids had a great time. We were actually able to check off everything on our summer to-do list. Yipee!! Now time to get serious about back to school. 

I feel that being busy is a running theme since I have restarted this blog. I don’t think it will slow down any time soon. Just gotta roll with it. 🙂 This week is no different. Even though we are busy I try to have a plan of some sort to keep us all sane. It’s easy for me to get off track and overwhelmed if there is not a routine in place. Right now we our routine = busy but having a outlook on what to expect makes it easier to handle.  This is the perfect someecard for me!!! Ha!


This is the breakdown for dinner plans for this week.

Sunday: Somewhere in Houston. The kids are going to record voices on a music track I am putting together for work.

Monday: Homemade Cheese pizza on whole wheat crust + tumbling

Tuesday: Spaghetti Carbonara and Spaghetti Marinara

Wednesday: FFY + tumbling

Thursday: Mom’s bringing over Mexican Chicken for the whole fam. Sisters and their families are also coming over to celebrate CJ’s life. We are having rice crispy treats and strawberry cake too. Some of his favorites.

Friday: Winging it!

Week of Dinners July 22nd

Well besides it still being summer, we are back to somewhat of a routine. We finished swim lessons and I am proud to say I am now the mother of 2 little minnows. 🙂 And I have actually made it to the gym for a workout longer than 20 minutes!

Dinners went well, I stayed on course this week without too many interruptions. My made-up Catalina slow cooker chicken was super good. The kids really liked it too. All I did was put 2 really large chicken breast in the slow cooker, add apricot preserves and fat free Catalina dressing and cooked it on low for about 5 hours. I took the breasts out when they were done and sliced them. Then spooned sauce  that was left in the slow cooker over chicken. Yummy stuff.

Geek Alert***BTW did anyone watch Teen Beach Movie??? Addison and I did and thought it was cute. But it put Todd to sleep if that says anything. The best song was “Like Me.”  If you haven’t seen it yet, it will be replaying incessantly for the rest of the summer.


You will never guess what I did on Sunday….My mom, sisters and I went to the Bridal Extravaganza in downtown Houston. I have not even set a date or thought too much about wedding planning. It was a spur-of-the-moment kind of deal and really just a time to hang out with my favorite people. But we really had a great time. We laughed and laughed. I will try to keep an update on how the planning is going.  Check out my ginormous wedding ring 🙂 Ha!blingring

So here is my plan for this week:

Monday: Grilled Pork chops with cottage potatoes and salad. Todd makes the best “Cottage Potatoes.” I’ll have to post the recipe one of these days.

Tuesday: Chicken Salad Sandwiches on Hawaiian Wheat Rolls. The chicken salad came from MyFit Foods. You need to check this place out to see if it is in your area. My Fit Foods is a company that makes ready made meals in 3 varying sizes to fit your calorie level. This chicken salad is sold “bulk” at my grocery store and Brent wanted to try it out.  It made for nice mini sandwiches and the kids like it.

Wednesday: Kids will be eating with grandparents. Todd and I will be at Nobi Public House for the Wit X-mas release.

Thursday: Cheese Tortellinis

Friday: Beef Fajitas

Saturday: Pool Party with Friends 🙂

Exercise and Eats for July 31

Is anyone as excited as I am about the XXX Olympics??!! I am facinated with the Olympics and love hearing about all the inspirational stories. I don’t know about you but the level of athlete and training make me want to step it up a notch or two. I am definitely not working as hard as I could. But everyday is a new day to try again. put this together and I thought it was great for those of us watching the olympics.

Here is my dinner plan for this week:

  •  Sunday: Leftovers – nothing exciting.
  • Monday: Todd and I are going to the Aerosmith concert, heading downtown for dinner!!!! I am so ready to rock and roll!!!
  • Tuesday: Sun-dried Tomato Grilled Chicken with Arugula and Cannellini Bean Salad.
  • Wednesday: Smoked Paprika Pork and Saffron Rice, Kale Chips
  • Thursday: Pig Night (anything goes)
  • Friday: Beef and Polenta Bake
  • Saturday: To Be Determined 🙂

Activity Plan:

  • Monday: Off Day – walking around downtown Houston and rocking out to Aerosmith
  • Tuesday: Spinning
  • Wednesday: Spinning
  • Thursday:Strength Training
  • Friday:Strength Training
  • Saturday: Step Class and Strength Training
  • Active Rest
